Processing
7-day box ferment, sun-dried.
Fresh pods are opened within 24 hours of harvest. Beans and pulp ferment in wooden boxes for seven days with daily turning, then dry slowly on raised beds under partial shade for ten to twelve days until moisture reaches 7%.
